Apple Mocktail

What you’ll need
- 70ml Dilmah Premium Ceylon Tea
- 25ml Biological apple juice
- li10ml Monin sucre de canne
Method
- Pre-chill a Martini glass with crushed ice.
- Add all ingredients in a Boston shaker.
- Shake well with ice cubes and strain the concoction into a Martini glass.
Lemongrass and Lemon Green Tea Curd Tartlet with Raspberries
An appetising starter to tempt your guests and keep them craving for more!
What you’ll need
Filling:
- 4 eggs
- 125g sugar
- 400ml cream
- 250ml Dilmah Lemongrass and Lemon green tea
- 1 lemon, juice and rind
- 1/2 lemongrass
- 1 gelatin
For the sweet shortcrust:
- Combine flour, butter and sugar.
- Add egg yolk and chilled water
- Mix and knead the dough lightly, until it comes together.
Beef Tenderloin Steak Dressed with Blue Cheese Served on Green Vegetables
Succulent and delicious, steak is the ideal Easter meal for meat lovers. Surprise your friends and family with this unique recipe.
What you’ll need
- 100ml strong Dilmah Yata Watte Tea
- 1500g tenderloin
- 200g blue cheese
- 300g green celery
- 300g green asparagus
- 100g balsamic cream
- 200ml olive oil
- 30g fresh rosemary
- 300g fresh strawberry
- 300g jasmine rice
- 100g butter
- Salt and pepper
Method
- Cut the tenderloin into 200g steaks.
- Fry non salted steaks to medium rare.
- Empty pan of steaks but keep the beef juice and add the shallots
- Mix in the 100g of the tea after 5 minutes.
- Add balsamic cream, salt and pepper and reduce to cream sauce form.
- Cut 4cm sticks of Asparagus and some celery.
- Fry the celery and asparagus in butter for around 3 minutes and add salt and pepper.
- Make a salad of strawberry, olive oil and rosemary.
- Boil the Jasmine rice. Assemble in a delicate presentation.
Dilmah Organic Rooibos Spiced Chicken Breast
An alternative option for those who aren’t fans of red meat, this spiced chicken recipe makes the perfect addition to your Easter table!
What you’ll need
- 1 tablespoon Dilmah Rooibos
- 2 pieces boneless chicken breast
- Carrots, celery, leeks and onions (cubed)
- 1 tablespoon salt
- 1 tablespoon paprika powder
- Dried thyme
- 100g cubed potato
Method
- Brew the Rooibos and marinate the chicken breast with the seasonings and leave for a few minutes for the flavour to set in.
- Place the chicken in a pan and fry in olive oil over a slow fire.
- Add the vegetables and potatoes and fry with the chicken.
- Serve on top of the vegetables.
Exceptional Rose and French Vanilla Marshmallows
End your Easter celebrations on a sweet note with these soft marshmallows!
What you’ll need
- 250g sugar
- 20g glucose
- 120ml water
- 2 Dilmah Exceptional Rose with French Vanilla tea bags
- 6 leaves gelatin
- 80g egg white
Method
- Boil sugar, glucose and brewed tea at 118°C, add gelatin.
- Whip egg whites and add syrup till you get a smooth texture. Let it set in a tray.
